Cosmic Brownies are dense, chewy chocolate brownies covered with chocolate frosting and colorful candy-coated chocolate pieces.
They’re especially recognizable for their fudgy texture and rainbow candy topping. For a lot of us, they were a childhood lunchbox staple.
My copycat Cosmic Brownies recipe takes everything we love about that nostalgic snack and turns it into a homemade dessert.
Instead of trying to turn this into a fancy bakery brownie, I wanted to keep the characteristics that make a Cosmic Brownie a Cosmic Brownie: dense, chocolatey, fudgy, chewy, and covered in chocolate ganache.
The rainbow candies on top are non-negotiable!
Ingredients for Homemade Cosmic Brownies
For the Fudgy Brownies
Unsalted Butter: Butter adds richness and helps create a soft, fudgy brownie.
Semi-Sweet Chocolate: Using actual melted chocolate in addition to cocoa powder gives these brownies a deeper chocolate flavor and dense texture.
Granulated Sugar: Adds sweetness while helping create the proper brownie texture.
Light Brown Sugar: Brown sugar adds moisture and chewiness, which is exactly what we want for Cosmic Brownies.
Eggs + Egg Yolk: Two whole eggs provide structure while the additional egg yolk adds richness without making the brownies cakey.
Vanilla Extract: Enhances all that chocolate flavor.
Unsweetened Cocoa Powder: We’re doubling down on the chocolate by using both cocoa powder and melted chocolate.
All-Purpose Flour: You don’t need much flour here. Keeping the flour relatively low helps give us that dense, fudgy center.
Kosher Salt: A little salt balances the sweetness and makes the chocolate flavor pop.
Baking Powder: We’re only using a small amount because we don’t want these brownies rising like cake.
Instant Espresso Powder: Optional, but a little espresso powder makes chocolate taste even more chocolatey without making the brownies taste like coffee.
Whole Milk: Adds a little additional moisture to the batter.

How to Make Homemade Cosmic Brownies
1. Prepare Your Pan
Preheat your oven to 325°F.
Line an 8×8-inch metal baking pan with parchment paper, leaving some parchment hanging over the sides. This makes it much easier to lift the brownies out once they’re finished.
Lightly coat the parchment with nonstick cooking spray.
2. Melt the Butter and Chocolate
Add the butter and chopped semi-sweet chocolate to a microwave-safe bowl.
Microwave in 20–30 second intervals, stirring between each interval, until everything is completely melted and smooth.
Allow the mixture to cool for about 5 minutes.
3. Make the Brownie Batter
Whisk the granulated sugar and brown sugar into the melted chocolate mixture.
Add the eggs and egg yolk one at a time, mixing well after each addition.
Mix in the vanilla extract and whole milk.
4. Add the Dry Ingredients
Sift the cocoa powder, flour, salt, baking powder, and optional espresso powder into the wet ingredients.
Using a rubber spatula, gently fold everything together until you no longer see streaks of dry flour.
Do not overmix your brownie batter. Overmixing encourages gluten development and can give you a tougher, more cake-like brownie instead of the fudgy texture we’re after.
5. Bake the Brownies
Transfer the batter to your prepared baking pan and spread it into an even layer.
Bake at 325°F for 22–27 minutes.
You’ll know they’re ready when the edges are set but the center still looks slightly soft. Insert a toothpick into the center. You want to see a few moist, fudgy crumbs attached.
If the toothpick comes out completely clean, you’ve probably taken them a little further than necessary.
6. Cool Completely
Allow the brownies to cool completely before adding your ganache.
At room temperature, this will take approximately 1 1/2–2 hours.
Don’t rush this part. Pouring warm ganache onto hot brownies can cause the topping to melt into the brownies instead of creating that distinct chocolate layer.
7. Make the Chocolate Ganache
Place the chocolate chips in a heat-safe bowl.
Heat the heavy cream until it’s steaming but not boiling. Pour the hot cream over the chocolate and allow it to sit untouched for 2–3 minutes.
Add the butter, vanilla, and a small pinch of salt.
Stir until completely smooth and glossy.
8. Decorate Your Cosmic Brownies
Pour the chocolate ganache over your cooled brownies and spread it evenly from edge to edge.
Immediately sprinkle the rainbow candy-coated chocolate pieces over the ganache.
And just like that, the childhood memories start coming back!
9. Chill and Slice
Refrigerate the finished brownies for 30–60 minutes, or until the ganache is firm enough to slice.
Use the parchment paper to lift the entire brownie slab from the pan.
For those clean, picture-perfect slices, run a sharp knife under hot water, wipe it completely dry, and slice. Clean the knife between each cut.

How to Make Fudgy Brownies Instead of Cakey Brownies
The texture is one of the most important parts of this Cosmic Brownies recipe.
We’re not looking for a light, fluffy chocolate cake. Cosmic Brownies should be dense, rich, chewy, and almost truffle-like.
A few things in this recipe help make that happen:
Use melted chocolate AND cocoa powder. Melted chocolate contributes fat and richness while cocoa gives us an intense chocolate flavor.
Add an extra egg yolk. The additional yolk adds richness without adding another egg white that could give the brownies more structure.
Don’t use too much flour. More flour generally creates a more structured, cakey brownie.
Don’t overmix. Fold your dry ingredients in just until combined.
Don’t overbake. Pull your brownies when a toothpick still has moist crumbs attached.
Let them cool. The brownies continue setting as they cool, giving you that dense, chewy final texture.
Pro Tips for the BEST Homemade Cosmic Brownies
Use a metal baking pan. Metal conducts heat differently than glass and is my preferred choice for getting evenly baked brownies.
Measure your flour correctly. If you have a kitchen scale, use it. Too much flour is one of the easiest ways to accidentally make cakey or dry brownies.
Use good chocolate. Chocolate is the star of the recipe, so use a semi-sweet chocolate that you actually enjoy eating.
Don’t skip the cooling time. I know it’s tempting, but the brownies need time to set before you add the ganache.
Chill before cutting. Slightly chilled brownies are much easier to cut into those clean rectangles.
Don’t skip the rainbow candies. Can you technically make these without them? Yes. Will they still feel like Cosmic Brownies? I’m going to say no!
