School cafeteria cheese breadsticks were basically soft baked breadsticks filled with melted mozzarella cheese and served with pizza or marinara sauce for dipping.

Depending on where you went to school, you may remember them as cheese stuffed breadsticks, school lunch breadsticks, Bosco-style sticks, mozzarella breadsticks, or simply cheesy breadsticks.

The important part was always the same: soft bread on the outside and stretchy melted cheese hiding in the middle.

For my homemade version, we’re making things as easy as possible by using refrigerated pizza dough and mozzarella string cheese.

No homemade dough. No complicated cheese filling.

Just wrap, season, bake and dip.

Ingredients You’ll Need Cheesy Breadsticks

One of my favorite things about these easy school cafeteria cheese breadsticks is how short the ingredient list is.

Refrigerated Pizza Dough

Store-bought refrigerated pizza dough is perfect here.

It gives us that soft, slightly chewy breadstick texture without having to make dough from scratch.

Let your dough sit at room temperature for a few minutes before working with it. This makes it easier to stretch without constantly springing back.

Mozzarella String Cheese

This is our shortcut to the perfect stuffed center.

Instead of trying to stuff shredded cheese into the dough, one mozzarella string cheese stick goes directly into each breadstick.

As they bake, the mozzarella becomes hot, stretchy and gooey.

Whole-milk mozzarella is my favorite if you can find it.

Butter

Melted butter keeps the tops of the breadsticks soft while also helping our Parmesan and seasonings stick.

We’re going to brush the breadsticks both before and after baking for even more flavor.

Parmesan Cheese

Finely shredded Parmesan creates that cheesy, slightly salty topping I remember on cafeteria-style breadsticks.

I like to add some before baking and another little sprinkle when they come out of the oven.

Seasonings

We’re keeping this simple with:

  • Granulated garlic
  • Granulated onion
  • Italian seasoning
  • Salt

You don’t need to go crazy with the seasoning.

Pizza Sauce

Technically optional, but is it really?

How to Make School Breakfast Pizza

How to Make School Cafeteria Cheese Breadsticks

These mozzarella stuffed breadsticks couldn’t be much easier.

Step 1: Prepare the Oven

Preheat your oven to 400°F.

Line a large baking sheet with parchment paper or lightly grease it.

Step 2: Cut the Pizza Dough

Unroll the refrigerated pizza dough onto a lightly floured work surface.

Gently stretch or roll it into approximately a 10 x 14-inch rectangle.

Cut the dough into 8 equal rectangles.

Don’t worry if they’re not absolutely perfect. You mainly want enough dough around each mozzarella stick to completely seal it inside.

Step 3: Add the Mozzarella

Place one mozzarella string cheese stick lengthwise down the center of each piece of dough.

Bring the long sides of the pizza dough up and over the cheese.

Pinch the dough together firmly to create a tight seam.

Then pinch both ends closed.

This is important!

Any openings in the dough give that melted mozzarella an opportunity to escape while the breadsticks bake.

Step 4: Place Them Seam-Side Down

Arrange the stuffed breadsticks seam-side down on your prepared baking sheet.

Leave a little room between each breadstick because the pizza dough will expand as it bakes.

Step 5: Make the Garlic Butter

Combine the melted butter with granulated garlic, granulated onion, Italian seasoning and a small pinch of salt.

Brush approximately half of the seasoned butter over the breadsticks.

Step 6: Add the Parmesan

Sprinkle the tops generously with finely shredded Parmesan cheese.

Press it down very lightly so some of that cheese sticks to the butter.

Step 7: Bake

Bake the school cafeteria cheese breadsticks at 400°F for approximately 12–16 minutes, or until the dough is puffed, cooked through and lightly golden.

Here’s the key:

Don’t overbake them.

We’re not trying to make crispy Italian breadsticks.

Those old-school cafeteria breadsticks were soft and pillowy, so pull them once the dough is cooked and lightly golden instead of waiting for them to become deeply browned.

Step 8: Finish with Garlic Butter

As soon as the breadsticks come out of the oven, brush them with the remaining seasoned butter.

Finish with another sprinkle of Parmesan cheese.

Let them rest for approximately 3–5 minutes before serving.

The cheese inside is going to be HOT!

Serve them warm with pizza sauce for dipping.

Shredded mozzarella works for plenty of recipes, but string cheese makes stuffing these breadsticks almost foolproof.

It’s already portioned, easy to wrap and creates a thick layer of melted cheese running through the center.
