How to Make Chili Cheese Dogs

1. Prepare the Chili

Start with whichever chili option you’re using.

If you’re making the canned version, sauté your onion and garlic before adding the canned chili, beef stock, and seasonings. Simmer until thickened.

If you’re making homemade chili, prepare your Texas chili and keep it warm over low heat while you cook the hot dogs.

2. Cook the Hot Dogs

Heat a grill or grill pan over medium-high heat.

Add the hot dogs and cook for about 5–7 minutes, rotating occasionally, until they’re hot throughout and lightly charred on the outside.

You can also cook them in a skillet if you don’t have a grill.

3. Toast the Buns

Brush the inside of each hot dog bun lightly with melted butter.

Place the buns cut-side down on your grill or skillet for 1–2 minutes, just until lightly golden.

Don’t skip this step! Toasting the buns adds flavor and helps them stand up to all that chili.

4. Assemble the Chili Cheese Dogs

Place one hot dog inside each toasted bun.

Spoon a generous amount of warm beef chili over the hot dog and top with freshly shredded cheddar cheese.

5. Get That Cheese Extra Melty

You could stop here, but I like my cheese MELTED.

Arrange the assembled chili dogs on a baking sheet and place them under the broiler for about 1–2 minutes.

Keep an eye on them because the cheese can go from perfectly melted to burnt pretty quickly.

Once the cheese is bubbling, pull them out.

6. Add Your Toppings

Finish your chili cheese dogs with whatever you’re feeling.

Try diced onions, sliced jalapeños, green onions, mustard, hot sauce, or even a little sour cream.

Then get some napkins because this is about to get messy.

Two Ways to Make the Chili

Option 1: Easy Doctored-Up Canned Chili

There is absolutely nothing wrong with taking a shortcut — we’re just going to make that shortcut taste better.

Start by sautéing finely diced onion in a little olive oil or butter until softened. Add minced garlic and cook just until fragrant.

Pour in your canned beef chili along with a splash of beef stock.

Then season it with chili powder, smoked paprika, cumin, Bayou City All Purpose Seasoning, and Bayou City Garlic Pepper.

Let everything simmer uncovered for about 10–15 minutes. This gives the flavors time to come together while allowing the chili to thicken.

The end result tastes much more homemade without requiring you to spend an hour making chili.

Option 2: Homemade Texas Chili

If you have the time — or you’ve got leftovers in the refrigerator — my homemade Texas chili takes these to another level.

My Texas chili combines ground beef and ground chuck with onion, jalapeño, bell pepper, chili powder, cumin, oregano, paprika, tomatoes, Bayou City Seasonings, and stock.

Let it simmer until rich and thick before spooning it over the hot dogs.

PRO TIP: If you’re specifically making my Texas chili for chili dogs, let it simmer uncovered toward the end of cooking if necessary. You want the chili slightly thicker than you would if you were serving it in a bowl.

The Secret to a Really Good Chili Dog

The chili needs to be thick.

A thinner, soupier chili might taste great in a bowl, but it isn’t ideal for chili dogs. Too much liquid immediately soaks into your bun and makes the whole thing difficult to eat.

Allow your chili to simmer until it’s thick enough that a spoonful sits on top of the hot dog without immediately running off.

And don’t overdo the beef stock when doctoring canned chili. Start with a small amount and add more only if you need it.

Best Cheese for Chili Cheese Dogs

Sharp cheddar is my favorite because its stronger flavor stands up to the beef chili.

Other good options include:

  • Colby Jack
  • Monterey Jack
  • Pepper Jack
  • Cheddar and Monterey Jack blend

Whatever you choose, shred it yourself when possible. Freshly grated cheese melts more evenly and gives you that smooth, cheesy finish.

This is where you can really make them your own.

For a classic chili cheese dog, I like finely diced raw onion, cheddar cheese, and a little mustard.

If you want something with more heat, add fresh or pickled jalapeños and hot sauce.

You could even set everything out buffet-style and make a chili dog bar for game day. Keep the hot dogs and chili warm and let everybody build their own.

What to Serve with Chili Cheese Dogs

Keep the cookout vibes going with french fries, seasoned potato wedges, onion rings, potato salad, coleslaw, baked beans, chips, or corn on the cob.
