  • Butter: Salted or unsalted.
  • Milk: For the creamiest texture, this is a necessity.
  • Garlic Paste: You can buy this or make it at home. See the instructions below in the recipe notes.
  • Short pasta noodles: You can use whichever macaroni you prefer; elbow macaroni, penne, cavatappi, bow tie, etc. Just prepare it al dente.
  • Cheese: I opt for milder cheese in this lobster mac and cheese recipe so the lobster can really shine. I use mild cheddar cheese, Colby Jack, and Gruyere .
  • Seasoning: Bayou City All Purpose Seasoning, Bayou City Garlic Pepper, lemon pepper, smoked paprika (plus more for topping). I excluded salt because it’s contained in some of the seasonings listed above.

How To Make Lobster Mac and Cheese

Cook Lobster

Carefully place the prepared lobster tails into the boiling water, one at a time.Boil the lobster tails for about 7-10 minutes, depending on their size. The shells should turn bright red, and the meat should be opaque.

Bring water to a boil and cook pasta until al dente (about 8 minutes).

Prepare Cheese Sauce

Preheat the oven to 350° F. In a saucepan melt butter. Once the butter is melted, toss in roasted garlic paste and season with Bayou City AP, salt, and pepper. Whisk together while mashing up that garlic paste until combined and cook for 3 minutes.

Pour milk into a saucepan and bring to a low simmer and then stir in cheese. Let simmer for 8 minutes or until the cheese is completely melted and mixture is thick enough to coat the back of a spoon.

Combine Pasta and Cheese Sauce

Drain pasta and while the pasta is still hot, place in a large bowl and mix in the rest of your cheese sauce, and chopped lobster meat. Mix well and place in a 10” Cast iron or 2 qt baking dish.

Top with 2 cups of mild cheddar making sure to evenly cover the top. Then sprinkle with some smoked paprika. Place in the oven for 15-20 minutes. Let cool for 10 minutes before serving.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Bring salted water to a rolling boil over high heat.
  • Carefully place the prepared lobster tails into the boiling water, one at a time.
  • Boil the lobster tails for about 7-10 minutes, depending on their size. The shells should turn bright red, and the meat should be opaque.
  • Carefully remove the lobster tails from the boiling water.
  • In the same boiling water, cook the elbow macaroni according to the package instructions. Drain and set aside.
  • In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously to create a roux. Cook for 2-3 minutes until it forms a paste.
  • Add in your roasted garlic cloves smashing them until smooth
  • Slowly pour in the milk while whisking constantly to avoid lumps. Continue cooking and stirring until the mixture thickens.
  • Reduce the heat to low and add the cheddar, Gruyère, and Colby Jack cheeses. Stir until the cheeses melt and the sauce becomes smooth.
  • Season the cheese sauce with salt, black pepper, and bayou city seasonings. Adjust the seasoning according to your taste.
  • Add the chopped lobster meat to the cheese sauce, stirring gently to combine.
  • In a large mixing bowl, combine the cooked macaroni and the cheesy lobster mixture, ensuring an even coating.
