What Is School Breakfast Pizza?
School breakfast pizza is a breakfast-style pizza inspired by the rectangular pizzas many of us remember from elementary, middle, or high school cafeterias.
Instead of your traditional tomato-based pizza sauce, breakfast pizza is typically topped with breakfast ingredients like sausage, eggs, cheese, and a creamy sauce.
For my version, I wanted to lean into the sausage flavor, so I make a homemade sausage gravy and use that as the pizza sauce. I reserve some of the cooked sausage to scatter over the top, then finish everything with scrambled eggs and mozzarella.
You get creamy gravy, savory sausage, fluffy eggs, melted cheese, and golden pizza crust in every bite.
Ingredients You’ll Need for breakfast pizza
One of the best parts about this cafeteria breakfast pizza is that you don’t need a long list of ingredients.
Pizza Dough
I like using refrigerated store-bought pizza dough to keep this recipe simple. A family-size rectangular pizza dough works especially well if you’re trying to recreate that classic school cafeteria look.
You can also use your favorite homemade pizza dough.
Breakfast Sausage
Ground breakfast sausage is the star of the recipe.
Cook it until browned and crumbled, then reserve some of the sausage for topping the pizza. The rest stays in the skillet and becomes the base for the sausage gravy.
Flour
All-purpose flour combines with the sausage drippings to thicken the gravy.
Milk
Whole milk gives the sausage gravy a creamy consistency without making it overly heavy.
Eggs
Softly scrambled eggs are scattered over the gravy before adding the cheese.
The key is to slightly undercook your eggs. They’ll continue cooking in the oven, so you don’t want them completely firm before they go onto the pizza.
Mozzarella Cheese
Whole milk mozzarella melts beautifully and gives the pizza that cheesy pull we all want.
Seasonings
A little seasoning goes a long way here because the breakfast sausage already brings plenty of flavor.
Black pepper is especially important for giving homemade sausage gravy that classic flavor.

How to Make School Breakfast Pizza
Making homemade school breakfast pizza with sausage gravy is easier than you might think.
Step 1: Pre-Bake the Pizza Crust
Preheat your oven to 425°F.
Stretch the pizza dough onto a lightly greased or parchment-lined sheet pan. If you’re using refrigerated rectangular dough, press it evenly toward the edges.
Bake the crust for about 5 minutes.
This little head start keeps the center of the pizza from becoming soggy once we add the gravy and toppings.
Step 2: Cook the Breakfast Sausage
Brown the ground breakfast sausage in a large skillet over medium heat, breaking it into small crumbles as it cooks.
Once browned, remove about one-third of the sausage and reserve it for topping the pizza.
Step 3: Make the Sausage Gravy
Leave the remaining sausage and drippings in the skillet.
Sprinkle in the flour and stir until the sausage is evenly coated. Cook for about 1 minute to remove the raw flour taste.
Slowly pour in the milk while stirring.
Season with black pepper and your favorite seasonings, then simmer until the gravy becomes creamy and thick enough to spread over pizza.
Step 4: Scramble the Eggs
Whisk the eggs together and cook them over medium-low heat until they’re softly scrambled.
Don’t cook them completely! Pull them from the heat while they’re still soft because they’ll finish cooking in the oven.
Step 5: Assemble the Breakfast Pizza
Spread a generous layer of sausage gravy over your partially baked crust.
Add the scrambled eggs, followed by mozzarella cheese and the reserved breakfast sausage.
Finish with a little extra black pepper if you like.
Step 6: Bake
Return the pizza to the 425°F oven and bake until the crust is golden and the mozzarella is completely melted and bubbly, about 8–12 minutes.
Allow the pizza to cool for a few minutes before cutting it into rectangles for the full school cafeteria experience.

Tips for the Best Breakfast Pizza
Pre-Bake Your Crust
Don’t skip this step. Sausage gravy contains much more moisture than traditional pizza sauce, so giving your crust a five-minute head start helps prevent a soggy bottom.
Make the Gravy Thick
You don’t want runny breakfast gravy here.
Cook it until it’s thick enough to easily coat the back of a spoon. A thicker gravy stays on the crust instead of running everywhere when you cut the pizza.
Don’t Overcook Your Eggs
Remember that the eggs are going back into a hot oven.
Cook them just until soft curds form, then remove them from the heat. They’ll finish cooking on the pizza.
Reserve Some Sausage
Using sausage in both the gravy and as a topping makes sure you get sausage in every bite.
Shred Your Own Mozzarella
Freshly shredded mozzarella generally melts smoother than pre-shredded cheese.
Variations
Once you have the basic school breakfast pizza recipe down, it’s easy to make it your own.
Bacon Breakfast Pizza: Add crispy chopped bacon along with the sausage.
Extra Cheesy: Mix mozzarella with cheddar or Monterey Jack.
Spicy Breakfast Pizza: Use hot breakfast sausage and add crushed red pepper or sliced jalapeños.
Meat Lovers: Top with sausage, bacon, and diced ham.
Veggie Breakfast Pizza: Add sautéed bell peppers, onions, mushrooms, or spinach.

What to Serve with School Breakfast Pizza
Honestly, this pizza is filling enough to be breakfast all by itself.
But if you’re serving brunch, pair it with:
- Fresh fruit
- Hash browns or breakfast potatoes
- Fresh berries
- Yogurt and granola
- Orange juice
- Coffee

Why Sausage Gravy Makes the Best Breakfast Pizza Sauce
This is where the recipe gets GOOD.
Instead of adding sausage and a separate white sauce, we’re making the sausage work double duty.
Start by browning the ground sausage. Once it’s cooked, remove a portion and reserve it for the top of the pizza.
Sprinkle flour directly into the remaining sausage and drippings. Cook the flour briefly before gradually stirring in whole milk.
As everything simmers, the milk thickens into a creamy sausage gravy packed with all that flavor from the pan.
You want the gravy slightly thicker than gravy you’d pour over biscuits. Remember, we’re using it as pizza sauce, so it needs to stay in place when you slice the pizza.

Frequently Asked Questions
What sauce goes on breakfast pizza?
For this recipe, homemade sausage gravy is the sauce. It adds creaminess and tons of breakfast sausage flavor.
Why should I pre-bake the pizza dough?
Pre-baking helps prevent the crust from becoming soggy underneath the sausage gravy.
What cheese is best for breakfast pizza?
Mozzarella is my favorite because it melts beautifully and still gives the pizza a traditional pizza texture. You can also combine mozzarella with cheddar for even more flavor.
Can breakfast pizza be reheated?
Yes. Reheat it at 375°F in the oven or air fryer until warmed through and the crust has crisped back up.
