Ingredients

  • 2 pounds catfish fillets
  • 2 cups buttermilk
  • 2 teaspoons Bayou City Garlic Pepper Seasoning
  • 2 teaspoons Bayou City All Purpose Seasoning

Cornmeal Coating
  • 2 cups yellow cornmeal
  • ½ cup cornstarch

Method
 

Marinate the Catfish
  1. In a large bowl, whisk together the buttermilk, Bayou City Garlic Pepper, Bayou City All Purpose Seasoning, sugar, and hot sauce.
  2. Add the catfish fillets, making sure they're completely coated.
  3. Cover and refrigerate for at least 1 hour, but for the best flavor, marinate for up to 4 hours.
Prepare the Coating
  1. In a shallow dish, combine: Cornmeal, Cornstarch, Bayou City Garlic Pepper, Bayou City All Purpose Seasoning, Whisk everything together until evenly mixed.
Season the Fish
  1. Remove the fish from the marinade and allow the excess buttermilk to drip off.
  2. Spread a thin layer of yellow mustard over each fillet.
  3. Season both sides with a light sprinkle of Bayou City Garlic Pepper and Bayou City All Purpose Seasoning.
  4. The mustard helps the coating stick while adding another layer of flavor—you won't taste it after frying.
Bread the Catfish
  1. Press each fillet into the seasoned cornmeal mixture, coating every side well.

Fry
  1. Heat vegetable oil to 350°F.
  2. Carefully lower the catfish into the hot oil, working in batches to avoid overcrowding.
  3. Fry for 4-6 minutes per side, depending on thickness, until the crust is golden brown and crispy and the fish flakes easily with a fork.
