Easy Mini Corn Dogs Recipe (School Cafeteria Style)

Ingredients
  

Mini Corn Dogs
  • 1 14-ounce package beef Lit’l Smokies or hot dogs cut in half
  • ¼ cup all-purpose flour for coating
  • Vegetable or canola oil for frying
Corn Dog Batter
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon all-purpose seasoning
  • ½ teaspoon granulated garlic
  • ½ teaspoon granulated onion
  • 1 large egg
  • 1 cup buttermilk plus 1–3 tablespoons as needed

Method
 

  1. Prepare the Lit’l Smokies: Drain the sausages and thoroughly pat dry with paper towels. Toss with ¼ cup flour until lightly coated, then shake away the excess.
  2. Heat the oil: Add about 2–3 inches of oil to a heavy-bottomed pot and heat to 350°F.
  3. Combine dry ingredients: Whisk together cornmeal, 1 cup flour, sugar, baking powder, salt, all-purpose seasoning, granulated garlic and granulated onion.
  4. Add wet ingredients: Whisk the egg and 1 cup buttermilk together, then pour into the dry ingredients. Stir just until combined. The batter should be thick enough to generously coat a Lit’l Smokie without immediately running off. Add additional buttermilk 1 tablespoon at a time only if necessary.
  5. Coat: Insert a toothpick or small skewer into a Lit’l Smokie. Dip it completely into the batter, turning until evenly coated.
  6. Fry: Carefully place the battered sausage into the 350°F oil. Repeat with a few more, being careful not to overcrowd the pot.
  7. Fry for approximately 2–3 minutes, turning as needed, until puffed and deep golden brown.
  8. Transfer to a wire rack and repeat with the remaining sausages, allowing the oil to return to 350°F between batches.
  9. Serve immediately with ketchup, mustard, honey mustard or your favorite dipping sauce.

Notes

Batter consistency: This is important. You want a thick batter that clings to the sausage. If it's too thin, add a little flour and cornmeal. If it's excessively thick, add buttermilk 1 tablespoon at a time.
Keep them dry: Moisture can cause the batter to slip off, so thoroughly dry the Lit’l Smokies before flouring.
Oil temperature: Keep your oil around 350–360°F. Frying at too low a temperature can make the corn dogs greasy.
Don't overcrowd: Work in small batches to maintain the oil temperature.
Reheating: Reheat leftovers at 375°F in an oven or air fryer until crispy and heated through.
